The aim of this study was to evaluate the effects of total lipids content and individual fatty acids on water uptake, by commercial barley varieties. The results from this study showed that unsaturated fatty acids, such as oleic acid (18:1-n9), have a role in controlling water uptake by the barley endosperm during steeping. When partial least squares (PLS) regression was used to relate total lipids, individual fatty acids and water uptake, oleic (18:1-n9) acid had a positive effect, while long chain unsaturated fatty acids such as arachidic (20:0) and lignoceric (24:0) acids had a negative effect on explaining 72% of the total variability in water uptake. Water uptake by the endosperm is just a component of the system that is responsible for the overall malt quality properties and chemical characteristics of a given material. In this context, both total lipids and individual fatty acids have a role on determining malt quality in barley.

The major polyunsaturated fatty acids (PUFA) in the major lipid classes of T. cornutus were 20:4n-6 (arachidonic acid; ARA), 20:5n-3 (ecosapentaenoic acid; EPA), 22:4n-6, and 22:5n-3 (docosapentaenoic acid; n-3 DPA), with very low levels of 22:6n-3 (docosahexaenoic acid; DHA). The unusual high levels of ARA, 22:4n-6, and n-3 DPA found in both the triacylglycerols and phospholipids of all specimens suggest the influence of dietary algae on its tissue lipids. In the polar lipids, the total PUFA content was consistently high, with n-6 PUFA compensating for the fluctuation in the total n-3 PUFA levels. T. cornutus concentrated high levels of ARA in the visceral lipids from the dietary algae whose lipid content were very low. The viscera may effectively serve as a source of ARA for infant formulas. High levels of ARA, EPA, and n-3 DPA in the phospholipids of T. cornutus were observed. T. cornutus is a healthful marine food containing high levels of n-3 DPA.

Consequently, ndg-4 mutants lay eggs with a pale appearance due to lack of yolk, and they are resistant to sterility caused by dietary supplementation with the long-chain omega-6 polyunsaturated fatty acid dihommogamma-linolenic acid (DGLA). Two other proteins, NRF-5 and NRF-6, a homolog of a mammalian secreted lipid binding protein and a NDG-4 homolog, respectively, have previously been shown to function in the same lipid transport pathway. Here, we report that mutation of the NDG-4 protein results in increased organismal stress resistance and lifespan. When NDG-4 function and insulin/IGF-1 signaling are reduced simultaneously, maximum lifespan is increased almost fivefold. Thus, longevity conferred by mutation of ndg-4 is partially overlapping with insulin signaling. The nuclear hormone receptor NHR-80 (HNF4 homolog) is required for longevity in germline less animals. We find that NHR-80 is also required for longevity of ndg-4 mutants. Moreover, we find that nrf-5 and nrf-6 mutants also have extended lifespan and increased stress resistance, suggesting that altered lipid transport and metabolism play key roles in determining lifespan.
