1. 水分:99%-99.5%
2. 電解質(Na+,K+,Cl-,HCO3-,etc)、分泌速度により濃度が異なる
[K+],[HCO3-] : 唾液 > 血漿
[Na+],[Cl-] : 血漿 < 血漿
早い分泌の時、唾液中の[HCO3-]↑、[Na+]↑、[Cl-]↑。よりアルカリ性となる

ムチン:=ムコタンパク、潤滑作用
リゾチーム:溶菌作用
αアミラーゼ:プチアリン
血液型物質:糖タンパクの一種
舌リパーゼ:舌唾液腺より少量
免疫グロブリン:IgA

機能
1. 消化作用
αアミラーゼにより、デンプンをマルトースに分解する
舌リパーゼにより脂肪を加水分解する

厚い食物を冷却する
